Ingredients

  • 2 tbsp olive oil
  • 1 red onion, chopped
  • 2 cloves of garlic, crushed
  • 2 medium carrots, diced
  • 2 celery sticks, diced
  • 1 red pepper, deseeded and diced
  • 1kg lean beef mince
  • 1 tsp smoked paprika
  • ¼ cup tomato paste
  • 2 can chopped tomatoes
  • 2 cups beef stock
  • Salt and milled black pepper
  • 3 fresh thyme sprigs
  • 1 can (290g) can NESTLÉ Dessert & Cooking Cream
  • To Serve:
  • 500g spaghetti, cooked according to packet instructions
  • fresh basil leaves
  • Parmesan cheese, grated

Method

  • Heat oil in a pan, and gently fry the onions and garlic for 5 minutes or until softened.
  • Add the carrots, celery and red pepper and cook for a further 4 – 5 minutes.
  • Add the beef mince and brown for 3–4 minutes.
  • Stir in the smoked paprika, tomato paste, tomatoes and beef stock.
  • Season to taste and add the sprigs of thyme.
  • Allow to simmer for 15–20 minutes, then stir in the NESTLÉ Cooking Cream.
  • Cook for a further 3–4 minutes.
  • Combine the creamy Bolognese with the cooked spaghetti and serve topped with fresh basil and grated Parmesan cheese.
