2 tbsp olive oil
1 red onion, chopped
2 cloves of garlic, crushed
2 medium carrots, diced
2 celery sticks, diced
1 red pepper, deseeded and diced
1kg lean beef mince
1 tsp smoked paprika
¼ cup tomato paste
2 can chopped tomatoes
2 cups beef stock
Salt and milled black pepper
3 fresh thyme sprigs
1 can (290g) can NESTLÉ Dessert & Cooking Cream
500g spaghetti, cooked according to packet instructions
fresh basil leaves
Parmesan cheese, grated
Heat oil in a pan, and gently fry the onions and garlic for 5 minutes or until softened.
Add the carrots, celery and red pepper and cook for a further 4 – 5 minutes.
Add the beef mince and brown for 3–4 minutes.
Stir in the smoked paprika, tomato paste, tomatoes and beef stock.
Season to taste and add the sprigs of thyme.
Allow to simmer for 15–20 minutes, then stir in the NESTLÉ Cooking Cream.
Cook for a further 3–4 minutes.
Combine the creamy Bolognese with the cooked spaghetti and serve topped with fresh basil and grated Parmesan cheese.
