Ingredients

  • 8 Chicken thighs
  • 2T Unsalted Butter
  • 50g Butter
  • 5 Thyme Sprigs
  • 3T Fresh Parsley Chopped
  • 1 Celery stalk finely diced
  • Mushroom sauce
  • ¼ Onion finely chopped
  • 2T Butter
  • 2 Cloves garlic minced
  • 125g Button Mushrooms
  • 2T Flour
  • 1tin Nestle Evaporated Milk
  • 1t Smoked Paprika
  • 2T Lemon Juice
  • 1T Worcestershire sauce

Method

  • Pre-heat oven to 180 degrees Celsius
  • In a pan, add oil and butter, and then add the Chicken thighs and brown, skin side down.
  • Add the thyme, celery and parsley
  • Once Browned, Remove from heat.
  • For the sauce. Sauté onions, garlic till tender, then add mushrooms till soft.
  • Add the Remaining ingredients and Nestle Evaporated Milk and allow simmering.
  • Season to taste.
